Honey Butter


This recipe is from my sister-in-law Mimi who got it from her sister who got it from her friend etc.  But my kids think it is the best thing to hit bread since strawberry lemonade jam.  They had honey butter for breakfast on their toast, honey butter sandwiches for lunch and honey butter on their rolls for dinner.  Usually honey butter gets hard to spread but this stays easily spreadable even when you keep it in the fridge.  Jeremy thinks it would taste a little bit better if the marshmallow cream was halved but his sweet tooth isn't as prominent as the rest of us.

Honey Butter

8oz jar of marshmallow cream
1 cup butter
1 cup honey
1/4 cup powdered sugar

Blend all of the ingredients in a mixer with a dough attachment not with a whisk.  Let it sit for an hour or two before you use it so the flavors can blend.  Store in the refrigerator.

Cheese Ball


No holiday meal would be complete for my family without this cheeseball.  It has obtained almost legendary status since my family served it to us growing up and we each still boast about the cheeseball our individual families have made.  I have been overruled in my family so we make our without nuts but rolling it in nuts gives a nicer presentation I think.

Cheeseball

2 pkg. creamed cheese (16 oz)
8 ox can crushed pineapple, well drained
1 Tbsp Season Salt (no this is not a typo)
1/4 c green pepper, chopped
1 Tbsp green onion, chopped
1/2 c craisens, optional
2 c chopped nuts, optional

Mix all ingredients except nuts in a mixer or food processor.  If you want to roll it into a ball on nuts you can or simply mound it into a bowl.  Chill well, preferably overnight.  Serve with crackers - ritz and wheat thins are our favorite.

Spinach Dip



This recipe is just the basic Knorr soup package recipe but we love it.

Spinach Dip

1 pkg (10 oz) frozen chopped spinach, thawed and squeezed VERY dry
1 container (16 oz) sour cream
1 c mayonnaise
1 package Knorr Vegetable soup mix
1 can (u oz) water chestnuts, drained and chopped
3 green onions, chopped

Combine all ingredients and chill at least 2 hours or overnight. Serve with vegetables or my favorite is with really good crusty sourdough bread chunks.

Cranberry-cheese Cracker Spread


This recipe was passed onto me by my friend Allison and has rapidly become one of my favorites. Serve this with wheat thins (my favorite), triscots or ritz crackers. You blend in 2 stages as if you try to do it all at once it comes out a brownish colored instead of a pretty red and green.

1 package cranberries
1 c sugar

Mix the above in a food processor (or blender) till finely chopped. Pour into a bowl. Clean your food processor out.

1 c cilantro
1 jalapeno pepper, seeded
2 green onions

Mix the above in a food processor. Stir gently into the cranberry mixture.

In a pie pan or serving dish spread 1 container softened cream cheese. Spread the cranberry mixture on top. Serve.
