Katherine's Chili Rub


We got this recipe from my sister-in-law Katherine several years ago. It has become our favorite way to eat salmon, either grilled or broiled. Just sprinkle the salmon heavily with the rub, let sit for 30 minutes and then grill or broil to desired doneness. It can also be used on chicken or pork or other fish. We mix up a batch and just keep it on hand in a jar for whenever fish goes on sale.

1/4 c sugar
1/4 c chili powder
1 Tbsp paprika
1 Tbsp cumin
1 1/2 Tbsp salt
1 tsp dry mustard
1 tsp cocoa
2 tsp pepper
dash of cinnamon
